Number of Servings: 12


    Cream style corn, 1 can
    Corn Meal, self rising , 2 cups
    Eggs, 2 large , lightly beaten
    Canola Oil, 1/2cup
    Buttermilk, lowfat, 1 cup
    Salt, 1/2 tsp
    Pam, for spraying baking dish


Preheat oven to 425 degrees. Combine salt and corn meal in mixing bowl. Stir together beaten eggs, buttermilk, oil and corn. Add to corn meal and mix well, making sure to scrape the bottom of the bowl. Pour into 8 x 11 glass baking dish sprayed with Pam. Bake for 40 - 45 minutes. Let cool at least 5 minutes before cutting into 12 servings. Really good with beans and greens!
Note: Canned corn varies in calorie count. This recipe uses Great Value corn with 90 calories per 1/2 cup serving (3.5 servings per can).
