    1 male eggplant - peeled and sliced
    1 cup bread crumbs
    1 jar marinara sauce
    2 cups of mozzarella cheese


Peel and slice the eggplant. Coat the eggplant with the bread crumbs. If you wet the eggplant, the breading sticks better. On a cookie sheet, bake the breaded eggplant on 350 for 30 minutes. Be sure to turn it at least once to cook it evenly. If the eggplant is soft when poked with a fork, you can remove it earlier. Put the eggplant in a glass 11x6 (or whatever the actual measurements are!) glass dish. Top with marinara sauce, parmesan cheese and mozzarella cheese. Bake until cheese is melted.
