Introduction

Ingredients

    3/4 cups unprocessed wheat bran
    3/4 cups 5 grain rolled whole grain cereal
    1 cup skim milk
    1 teaspoon lemon juice
    1/3 unsweetened apple sauce
    1 egg
    2/3 cup brown sugar
    1 small over ripe banana
    1 teaspoon vanilla extract
    1 teaspoon cinnamon
    add nutmeg, clove and ginger to taste
    1 cup whole wheat flour
    1 teaspoon backing soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 large granny smith apple shredded with skin (or apple of your choice)

Directions

Makes 18 medium - small muffins.

1. Preheat oven to 375 degrees F. Grease muffin cups or line with paper muffin liners.
2. Mix wheat bran, oats and milk and lemon juice; let stand for 10 minutes.
3. Beat together egg, applesauce, sugar, vanilla, banana and spices and add to bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into bran mixture until just blended. Fold in shredded apple and pecans and spoon batter into prepared muffin tins.
4. Bake 15 - 20 minutes or until a toothpick inserted comes out clean.

    THIS LOOKS SOOO YUMMY. I can't wait to make it! And to think I threw out an overripe banana this morning!
    How many pecans? I couldn't find them in the ingredient list. :S
