    12 oz Soy Chorizo
    2 tbsp extra virgin olive oil; divided
    4 green peppers, chopped in large pieces
    3 onions, chopped in larges pieces
    5 cloves of garlic, chopped
    10 oz of fresh mushrooms, sliced
    1 tbsp salt
    1 tsp pepper
    28 oz petite diced tomatoes
    14.5 oz diced basil, garlic & oregano tomatoes
    1 tbsp sugar
    1 tbsp Italian seasoning
    13.25 oz box of whole grain rotini


1. Spray large pan with Pam and add 1 tbsp olive oil; remove casing and cook soy chorizo. Remove from pan and place in a side plate.
2. Add the other tbsp of olive oil to pan.
Add peppers and onions, cook for 3-4 minutes; then add garlic and mushroom. Add salt & pepper to taste. Cook for another 3-4 minutes then add soy chorizo. Cook for 2-3 minutes.
3. Add tomatoes, sugar and Italian seasoning; bring to a boil then reduce to a simmer and cover.
Cook for 30 minutes to let flavors blend.
4. Cook pasta as listed on package.
5. Mix pasta with sauce and serve.

Add optional parmesan cheese.

Serving Size: about 1.5 cups per serving
