    2 cups Cooked farro
    7 oz baby spinach
    1 tbsp grapeseed oil
    Kosher salt to taste


Instead of grapeseed oil, chop and cook pancetta or bacon until crispy. Remove crispy bits. Wilt spinach in oil remaining. Combine wit warmed farro, top with crumbled pancetta or bacon.


Cook farrow ( can be made ahead and reheated). Hat oil over medium high heat. Add garlic and quickly saute. Add spinach and turn to coat with oil and mix in garlic. Walt spinach but do not cook it down to mush. Combine wilted spinach with warned farro. Serve immediately. Leftovers can be reheated in microwave.
