Ingredients

    3 medium potaotes, cut into cubes
    4 medium carrots, sliced thin (or 1 bag baby carrots, whole)
    3 cups sliced button mushrooms
    3 tbsp butter or margarine (I used Blue Bonnet for this recipe)
    4 boneless, skinless chicken breast (Look for the ones with low cal and low sodium at your grocer)
    Mrs. Dash Chicken Seasoning to taste.

Tips

If you want to cut more salt, use unsalted butter in place of the margarine.


Directions

Combine potatoes, carrots and mushrooms in a 9 x 11 casserole pan. Mix in margarine and coat with Mrs. Dash. Bake uncovered for 45 minutes in a 375* oven, remove from oven. Sprinkle seasoning on chicken breast and lay on top of potato mixture. Return to oven and bake an additional 45 minutes or until chicken is done and vegetables are tender.
