Ingredients

    1 Tbsp flax meal
    3 Tbsp water

    1 cup yellow cornmeal
    1/2 cup unbleached all-purpose flour
    2 Tbsp raw sugar
    1 Tbsp baking powder
    Dash salt
    1/4 cup vegan margarine
    1/2 cup corn kernels
    1 jalapeno, finely diced (optional)
    1/2-3/4 cup unsweetened almond milk

Directions

Prepare a 9x9 baking dish with non-stick spray.

In a small bowl, combine flax meal and water. Set aside.

In a large bowl, combine dry ingredients well. Rub in vegan margarine. Add corn and jalapeno, then mix in enough milk to make a batter slightly thicker than pancake batter.

Pour batter into prepared baking dish and bake at 350 degrees for about 20 minutes or until toothpick comes out clean.
