    1 large Egg, fresh, whole, raw
    0.25 cup Butter, unsalted
    2 tsp Vanilla Extract
    2 tsp Baking Powder
    0.50 tsp Baking Soda
    2.50 cup Wheat flour, white, bread, enriched
    8 tbsp Chocolate Chips, Sugar-Free, Mini, Semi-Sweet, Sensato
    2 cup Buttermilk, 1%


If steaming, place directly into the steaming chamber (not the rice bowl), and put a couple of layers of paper on top of the chamber under the lid.


Preheat the oven to 375. Prepare mini-muffin cups, silicone or paper-lined metal, or 12 regular muffin cups. Beat the egg, then beat in the buttermilk and warm it a little (microwave ~ 1 min). Beat in the butter, vanilla and Sweetzfree. In a large bowl mix the flour, baking powder and baking soda. Gently combine wet ingredients with dry, then gently stir in chocolate chips. Spoon into muffin cups with a 1" cookie-dough scoop or an ice-cream scoop, filling each cup. Bake 30min. Test with toothpick.

Serving Size: Makes 36 mini-muffins or 12 full-size muffins.
