Ingredients

10 cups homemade vegetable broth, no salt added
4 cups fresh brussel sprouts
2 broccoli crowns, chopped
2 small to medium zucchini, chopped
2 small yellow squash, chopped
1 cup chopped red bell peppers
2 tbsp each garlic powder and onion powder
3 tbsp salt
1 tsp pepper
1 tsp smoked paprika
1 can of nonfat evaporated milk
1/2 cup flour dissolved in 2 cups water
16 ounces extra sharp cheddar cheese, cut into cubes
Tips
Don't tell people who are resistant to many vegetables what is in this until they've finished half of it and gushed about how good it is. BWUAHAHAHA!
Directions
Boil the vegetables until fully cooked/soft in the vegetable broth that you've previously made. (If you click on my username, there is a recipe among my shared recipes for low sodium vegetable broth. Just leave off the salt when making it, or reduce the salt accordingly when making this soup.) Add the seasonings, and blend everything with the emersion blender (or transfer in batches into your blender), until the texture of the soup is uniform. Add in the evaporated milk and the flour water. Stir constantly. Add in the cheese, and keep stirring until melted.
Serving Size: Makes 12 really generous 3 cup servings. About 21 cups.
