Introduction

    1 bunch collard greens
    2t bacon grease
    1/t salt

Directions

Fill a clean sink or vessel with cold water. Select the two or more of the largest, nicest looking leaves and set aside for wraps. Submerge the remaining greens in the water, agitating slightly. Let the silt collect in the bottom of the sink for about ten minutes. Remove greens from water to colander, careful not to disturb the silt. Drain and repeat until no grains are found in the sink.

In a five quart (large) pot, add 2t bacon grease over medium-low heat. Butter or butter substitute may be substituted for a less intense flavor.

Meanwhile, stack all of your leaves on top of each of each other with stems at one end. starting at the leafy/top end, cut across the rib in one and a half inch strips. As you near the base/stem end (~5"), cut leafy parts off either side of the stem. Dice the stems.

Adding handfuls at a time, turn the greens to coat them in grease and evenly begin the cooking process for the entire batch. Once all greens are coated, pour in 3/4c water and cover.

In fifteen minutes, toss greens as you sprinkle on the salt. Reduce heat to low and cover. In ten minutes, reduce the heat and continue to toss occasionally for another thirty minutes.
