    1 large sweet potato
    9 oz. chicken
    1 tsp. olive oil
    1 zucchini, sliced
    1/2 cup chipotle salsa
    5.3 oz. Oikos Greek yogurt, plain


Season with salt, pepper,and additional chipotle if desired


Poke holes in sweet potato and microwave approx. 7 minutes. Cut in half and scoop out insides.
Cut chicken to bite size pieces and cook in oil.
Add cooked mashed sweet potato insides, salsa, zucchini, and yogurt.
Fill potato skins with mixture and bake at 350 for 10 minutes.
