    - 6 lasagna noodles (I use Catelli express which doesn't require boiling)
    - 1/2 cup chopped onion
    - 4 cloves garlic
    - 1 tsp olive oil
    - 2 tbsp cornstarch
    - 2 tbsp parsley
    - 2 tbsp basil
    - 1/8 tsp nutmeg
    - 2 cups milk
    - 1 10oz package frozen spinach
    - 1/2 cup sliced black olives
    - 2 cups no-fat cottage cheese
    - 2 egg whites, slightly beaten
    - 1 cup light mozzarella
    - 1/2 cup parmesan cheese


In medium non-stick saucepan saute onion and garlic in the oil (about 5 minutes). Stir in cornstarch, parsley, basil, nutmeg. Gradually stir in milk. Cook on medium heat until thickened (about 10 minutes). Stir in spinach and olives.

In a large bowl combine cottage cheese, egg whites, 3/4 cup of mozzarella, and 1/4 cup parmesan.

Assemble the lasagna. (The order and amounts are different than your traditional lasagna in order to reduce the number of noodles used and save some calories).
- Use a smallish baking pan (smaller than 9x13 - more like 8x11).
- If using no-cook noodles then add a few tablespoons of the spinach mixture on the bottom.
- Add three lasagna noodles.
- Top with half of the spinach mixture.
- Top with of the cottage cheese mixture.
- Three more noodles on top
- Remainder of spinach mixture
- Spread the remaining 1/4 cup mozzarella and 1/4 cup parmesan cheese

Bake at 350F for 45 minutes
