    4 Cups dried bean soup mix (or 1/2 C each: Great Northern; kidney; Navy; Lima; Butter; Split Peas'; Pinto; Lentil)
    2 chicken bouillion cubes
    1 6 oz. can tomato paste
    1 large onion, chopped
    4 carrots, sliced
    2 cloves garlic
    1/4 C dried chives
    3 bay leaves
    2 tbsp parsley flakes
    1 tsp thyme
    1 tsp dry mustard
    1/2 tsp red or cayenne pepper


Wash beans, drain. Place in a 4 qt. kettle with 5 C of water. Boil 2 mins. Remove from heat, cover and let stand 1 hour.

Place ham bone in 3 quarts water in an 8 quart kettle. Simmer while beans are standing. Drain beans. Add to ham stock; add all remainning ingredients. simmer 2-3 hours until beans are tender. Discard bone and bay leaves. Add water if desired. Yield: 5 1/2 quarts soup. 11 2 Cup servings.
