    3 lb Chuck Roast
    1/2 tsp Adobo
    1/2 tsp garlic powder
    1/2 tsp black pepper
    1 onion, coarse chop
    2 carrots, thick slices
    2 parsnips, thick slices
    1 potato, chunked
    2 celery stalks, coarse chop
    4 or 5 large mushrooms, sliced thick
    1 cup red wine
    1 cup water
    12 asparagus spears


You can make a gravy for the meat out of the pan juices. I don't. To further reduce the carbs, do not add the potato.


Season meat and brown in olive oil. When well browned, add red wine & water to the pan. Cover and braise for 60 mins. Then add the remaining ingredients, excepting the asparagus. Replace the cover and continue cooking on a medium flame for another hour or until the meat is tender. Add the asparagus and cook another minute or two.
