    *Almond flour, 1.25 cup
    *Bob's Red Mill Unsweetened Flaked Coconut, 1 cup
    Pumpkin, canned, without salt, 1 cup
    **Flax Seed Meal (ground flax), 2 tbsp
    *Smart Balance Buttery Spread, 3 tbsp
    Egg Beaters, original - 1 1/4 cup
    100% Whey Protein "GNC Pro Performance" Vanilla or Chocolate Powdered Drink Mix 2 scoops
    1 tsp baking powder
    1 tsp baking soda
    1 tbsp cinnamon


mix all the dry ingredients in one bowl. In another bowl mix the rest of the ingredients. Combine the bowls and mix until batter is smooth. Place in a greased muffin pan and bake at 350 degrees for 20-25 min
