Introduction

Sauteed shrimp and red pepper with quinoa & mango. Colourful and tasty meal that's great for either dinner at home or potlucks and picnics. Leftovers are great when eaten cold for lunch the next day too! Sauteed shrimp and red pepper with quinoa & mango. Ingredients

    1 package of medium size shrimp 180g
    1 cup of raw quinoa
    1 medium sized red bell pepper
    1 mango

Tips

Don't cook the mango! It just ends up tasting kind of bitter if you do.


Directions

1. Peel shrimp and put to the side
2. Cook quinoa (follow directions on the package)
3. Cook shrimp in a pan with some oil over medium heat until pink
4. Add chopped red pepper and continue cooking until it has softened a bit
5. Peel and chop up your mango
6. Pour cooked quinoa, shrimp and red pepper, and mango into a large bowl and mix.
7. Eat your amazingly colourful and delicious meal
