Ingredients

    1 Stick unsalted butter, softened at room temperature
    1/2 C sugar
    1 egg
    1 tsp vanilla
    2 large ripe bananas, mashed
    1/2 C reduced fat sour cream
    1 C all-purpose white flour
    2 T unsweetened cocoa powder
    1 tsp baking soda
    1/4 tsp salt
    1 C semi-sweet chocolate chips
    1/2 C walnuts, coarsely chopped

    Tools:
    Set of measuring cups and spoons
    2 medium mixing bowls
    1 large mixing bowl
    Hand mixer
    Wire wisk
    Rubber spatula
    9x5 loaf pan
    Parchment paper (optional)
    Serrated knife

Tips

Cooking spray may not be enough to coax this bread from the pan. Butter or Crisco are better choices to grease the pan. You can also line the bottom of the pan with parchment paper for a flawless loaf.


Directions

Preheat oven to 350 degrees and generously grease your loaf pan.
In medium mixing bowl, lightly beat egg with a wire wisk and stir in smashed bananas, sour cream and vanilla. Set aside.
In another medium bowl, sift together flour, cocoa powder, baking soda and salt. Set aside.
Cream butter and sugar in large mixing bowl on medium speed until fluffy (about 3 mins). Beat in banana mixture until fully incorporated. Slowly add dry ingredients and mix for 2-3 minutes until very smooth. Stir in chips and nuts.
Pour the batter into the pan and bake for 50 minutes or until toothpick tests clean.
Cool on wire rack for 10-15 minutes.
Carefully remove from pan, slice and serve.
