A vegetarian soup. A vegetarian soup.

    1 tablespoons olive oil
    1 onion, chopped fine
    2 cloves garlic, minced
    1 teaspoon dried thyme
    1 bay leaf
    1 tablespoon tomato paste
    15 ounce can tomatoes
    4 cup vegetable broth (or water)
    1 cup lentils, rinsed
    1 bunch chard, stems removed and chopped
    salt and pepper to taste


You can use water in place of vegetable broth.


Saute onion in olive oil for 10 minutes or until they are transparent. Add chard stems and garlic. Continue cooking until chard stems are softened. Add thyme, bay leaf, can of tomatoes, tomato paste and vegetable broth. Bring liquid to a simmer. Add the lentils. Cook for about 30 minutes or until are done. Cut the chard leaves into narrow ribbons and add to the soup pot. Cook for another 10 minutes. Season with salt and pepper.
