Ingredients

    1 1/2 CUPS OATMEAL
    1 CUP WHOLE WHEAT PASTRY FLOUR
    1/3 CUP RAW SUNFLOWER SEEDS
    1/4 CUP FLAXMEAL
    2 TSP BAKING POWDER
    1/2 TSP SEA SALT
    1/3 CUP LIGHT BROWN SUGAR
    1 LARGE BROWN OMEGA 3 EGG
    1/3 CUP SUNFLOWER OIL
    1 CUP SKIM MILK
    2 TSP LEMON JUICE
    2TBSP SEMI-SWEET CHOCOLATE CHIPS

Directions

PREHEAT OVEN TO 350 DEGREES. PLACE MUFFIN LINERS IN MUFFIN PAN. MIX MILK AND LEMON JUICE TOGETHER TO MAKE BUTTER MILK. THEN ADD OIL TO BUTTERMILK MIXTURE. IN A SEPARATE BOWL, ADD OATMEAL, FLOUR, SUNFLOWER SEEDS, FLAXMEAL, BAKING POWDER, SALT, SUGAR, AND CHOCOLATE CHIPS. MIX BOTH TOGETHER AND FILL MUFFIN CUPS ABOUT 3/4 FULL. BAKE FOR ABOUT 30 MINUTES
