Ingredients
-
1 3-oz package of ramen noodles
2 cups chicken broth
1.5 tbsp. soy sauce
1 tbsp ketchup
1 tsp sugar
1 tsp sesame oil
1 tsp Sriracha
.5 cup matchstick carrots (or peeled carrots)
1 lightly beaten egg
1.5 tsp fresh lime juice
.25 cup chopped green onions
Tips
*Other toppings are commonly added to ramen soups - the nutritional facts for this recipe include 1 oz boiled chicken breast, 1 hard boiled egg, and .5 cup corn. Feel free to mix and match!

Directions
-Bring 2 cups of water to a boil
-Add noodles and cook for 2 minutes
-Drain noodles and rinse in cold water
-Return saucepan to stove
-Add broth to boil over medium heat
-Whisk in soy sauce, ketchup, sugar, sesame oil, and Sriracha
-Add carrots and cook for 1 minute
-Whisk egg into broth
-Add in noodles to broth and cook for 30 seconds
-Remove from heat and stir in lime juice and onions
Serving Size: makes approximately 4 1-cup servings
