    2-3 cups boneless, skinless chicken breast, boiled and skinned
    1 tsp. cumin
    1 jar salsa, divided
    8 oz. cream cheese
    1/4-1/2 cup green onions, chopped
    1 can RoTel
    1 ripe avocado, peeled, pitted, sliced
    6 8-inch flour tortillas


Mix chicken with cumin and 1/2 cup salsa. Heat over medium heat in a deep skillet or pot. Add cream cheese, stirring until melted, onions, and RoTel. Heat until simmering. Spray 9x13 inch glass dish with cooking spray. Spread avocado in a line down middle of each tortilla. Spoon 1/4-1/3 cup of chicken mixture over avocado. Roll and place tortillas seamside down in dish. Pour remaining chicken mixture and salsa evenly over enchiladas. Cover tightly with foil. Bake in 350 degree oven 20-30 minutes, until hot and bubbly. Garnish with tomatoes, onions, and jalapenos if desired.
