    *sweet yellow onion, raw (1 medium onion), 1 serving (remove)
    Chicken Stock, Homemade, defatted, 3 cup (remove)


Peel a sweet onion (preferably Walla Walla) and cut into rings. Place in the bottom of a large slow cooker with 1 cup of water. Place a rack on top. Place 5 chicken breasts (skin and bone still there) or a whole chicken on the rack. Sprinkle with freeze-dried garlic flakes and no-salt seasoning. Cook 6-8 hours on low. Remove chicken and eat or freeze, and pour broth and onions into a tall container. Allow to cool and then refrigerate.
To make the soup, remove the fat layer. Use a stick blender to blend the broth and onions. Heat. Serve with grated parmesan.
