    1 lb broccoli stalks, chopped
    1 Tbsp butter
    100g onion, diced
    15g carrot, diced
    50g potato, diced
    1/4 cup bell pepper, chopped or diced
    balsamic vinegar, wine, and salt & pepper to taste
    4 cups water


1. Saute onion in butter until it begins to soften, then add pepper and carrot. Deglaze pot or pan with vinegar and wine.

2. Add broccoli, pototato and water, season gently with salt and pepper, and simmer about one hour.

3. Let soup cool, then puree in batches in blender or similar. Strain through a wire mesh strainer if desired for a smoother texture. Return to pot, simmer, and season to taste.
