    1 tsp olive oil
    1/2 cup bell pepper
    1/2 cup black beans
    1/2 cup corn
    5 ounces chicken breast, diced
    1 cup cooked brown rice
    1/4 cup colby jack shredded cheese
    1/4 cup salsa


-Heat olive oil in a skillet over medium heat.
-Add bell pepper, corn, black beans, and cooked chicken to the pan. Saute until heated through, about 5 minutes.
-For each serving, put 1/2 cup cooked brown rice in bowl. Top with chicken mixture, then add 2 tablespoons salsa and 2 tablespoons shredded cheese.
