    8 oz chicken breast
    2 oz pepper jack cheese, shredded
    1/2 cup frozen spinach, thawed and drained
    Sea salt, to taste
    Black pepper
    PAM spray
    1/2 Tbsp seasoned breadcrumbs
    1 tsp Cajun seasoning


Preheat oven to 350. Flatten chicken breasts to 1/4"
In a bowl combine cheese, spinach, salt & pepper. In small bowl combine breadcrumbs & Cajun seasoning together.
Spoon 1/4 cup spinach mixture into each breast. Roll each breast tightly and fasten with lots of toothpicks ... About 8 per breast to ensure no filling seeps out.
Spray breast rolls with Pam and sprinkle Cajun mix over all. Spoon any remaining spinach mix over breasts.

Place chicken rolls seam side up on foil lined baking pan. Bake 35 to 45 minutes till chicken is cooked through.

Remove all toothpicks prior to serving.
