Introduction

Ingredients

    6 (7 oz.) cans salmon, Atlantic (boneless, skinless)
    2 tablespoons lemon juice
    1 medium onion, minced
    24 saltine crackers, fat-free, crushed
    2 large eggs, beaten
    1/4 cup all-purpose flour


Tips

Prep time does not include refrigeration time.
These patties freeze well and are best when reheated in the oven. To re-heat, place frozen patties in pre-heated 350 degree oven for 20 minutes or until heated through.


Directions

Place salmon in large mixing bowl; sprinkle with lemon juice and toss lightly with fork breaking up large chunks of salmon; allow to set 5 minutes. Add onions, crushed saltines and eggs, mixing lightly with fork; gradually work flour into mixture. Refrigerate mixture 30 minutes or until chilled. Form into 12 3-inch patties; place on parchment lined baking sheet and bake in pre-heated 375 degree oven 30-40 minutes or until tops are lightly browned. Allow patties to cool 5 minutes before removing from pan.
