1 small-medium head of cauliflower, riced and steamed and drained (mush out as much liquid as possible)
1 c. mozzarella cheese, low fat
2 T parmesan cheese (the topping)
5 egg whites, or 2/3 c. ALL Whites
1 tsp garlic powder
1 T dried oregano
5 T coconut flour
1.5 T mushroom seasoning (or salt to taste)
Tips
Ricing cauliflower is very simple. Chop up head of cauliflower into 4-5 sections. Throw in blender and add water to cover. Pulse until it resembles rice--this doesn't take long! Drain through a strainer and push out liquid. Transfer to pot, cover and let steam on medium for 5-8 minutes, stirring occasionally. Strain and drain again. DONE.
Directions
Start with making sure that your cauliflower is ready: prep needed is ricing and steaming and draining out all the liquid possible.
Combine all ingredients. Oil a pan (coconut oil is good). Make 2-4 personal pizzas, square is a good shape too.
Bake at 375 for 25 - 30 minutes.
