Good light snack. Good light snack.
Number of Servings: 24


    2 cups whole wheat flour
    1 teaspoon soda
    3/4 cup Sugar Twin (white)
    1 teaspoon salt
    2 large eggs (beaten)
    1 cup mashed bananas (mashed)


Beat eggs until creamy yellow in mixing bowl. Add mashed bananas and mix well.
Add flour, soda, Sugar Twin, and salt and mix with spoon until all is thoroughly mixed. Batter will be fairly thick.
Place batter into 24 muffin tins. ( I use 2 12 cup muffin pans) Bake at 350 degrees for about 15 min.
Or place batter in bunt pan or loaf pan and bake at 350 degrees for about 45 min.

Serving Size: makes 24 small muffins or 1 loaf bread
