A Quick Lunch... A Quick Lunch...
Number of Servings: 4

Ingredients

    Navy Beans- 1 Can (or any white bean)
    Diced Tomatoes- 1 reg. size can
    Spinach- 1 cup coarsely chopped
    Arugula- 1 cup coarsely chopped
    Fat Free Feta on top

Directions

Mix all ingredients & add feta to top.
Really quick in the microwave.
Any green leafy veggies could be used- use what you have.
Serves 4, I guess.
What I didn't use for lunch- I turned into SOUP with some added broth and more veggies.
