Number of Servings: 4

Ingredients

    1 bunch fresh asparagus (approx. 20)
    4 Roma / plum tomatoes cut in half, lengthwise
    1 tsp or less garlic powder
    2 Tbsp or less grated Parmesan Cheese
    Non-Fat Olive oil or Butter Flavor Cooking Spray
    Sea Salt to taste
    Fresh ground pepper to taste

Directions

Wash and cut ends off asparagus. Spray baking sheet with Fat-Free cooking spray; arrange asparagus spears evenly - saving room for tomatoes. Spray spears lightly with cooking spray. Season to taste with garlic, sea salt pepper and parmesan, cheese to taste.

Place tomato halves open face up and sprinkle with remaining Parmesan Cheese.

Bake at 425 degree oven for 20-25 minutes depending on how tender-crisp you want your spears to be; check tomatoes at 15 minutes and remove early with spatula if done.

Asparagus spear tops get crispy - This is one of my favorite healthy snacks all year long.
