    1 lb fresh green beans, ends trimmed
    2 Tbsp olive oil
    1 Tbsp grated lemon peel
    2 Tbsp fresh lemon juice
    1 Tbsp balsamic vinegar
    2 Tbsp sesame seeds, toasted
    Salt & pepper, to taste


1. In a medium saucepan, bring lightly salted water to a boil. Add the green beans and cook until crisp-tender, 3 - 4 minutes. Drain and place the beans in a bowl of ice water to stop the cooking process.

2. In a small bowl, combine the oil, lemon peel, lemon juice, and vinegar and mix well. Set aside.

3. Remove the beans from the ice water and drain. Place in a large serving bowl. Give the vinegar mixture a final whisk and pour over the beans and toss to combine. Season with salt and pepper and top with the toasted sesame seeds
