Introduction

Ingredients

    1# chicken, cut into bite-sized pieces
    1.5 c. cooked brown rice
    1.5 tsp garlic powder
    1 pkg broccoli florets
    0.25 c. slivered scallions
    2 tsp sesame seeds
    0.25 c. reduced-sodium soy sauce

Tips

To make the veggies a little more tender to serve to kids, turn the heat down to medium, cover the skillet, and let simmer for another 3-4 minutes.


Directions

1. Cut chicken breast into bite-sized pieces.
2. Coat a large nonstick skillet with cooking spray and place it over medium-high heat. Cook the chicken, stirring frequently, for 3-4 minutes or until cooked 3/4 of the way through. Remove from pan and set aside.
3. Coat the same skillet with additional cooking spray. Cook the rice and garlic powder for 1 minute, stirring constantly so the rice doesn't burn. Add the broccoli, continuing to stir. When the broccoli turns bright green, add the chicken, scallions, sesame seeds and soy sauce. Cook for 1-2 minutes longer, remove from heat and serve.
