    1 c. whole wheat flour
    1 1/2 c. all-purpose flour
    1 TBS vital wheat gluten (opt)
    1/2 c. granulated sugar
    1/2 c. pyure stevia sweetener bakeable blend
    2 tsp. pumpkin pie spice
    1 1/2 tsp. cinnamon
    1 1/4 tsp baking soda
    3 egg whites
    1 tsp. vanilla
    2 tsp. splenda brown sugar blend
    1 c. cannned pumpkin
    1/3 c. canola oil
    1 medium peeled, chopped granny smith apple


Preheat oven to 325 degrees F.
Lightly coat muffin tins w/ nonstick cooking spray or line with paper liners
Combine first eight dry ingredients in a mixing bowl.
Add remaining ingredients to mixture using the fewest strokes that will moisten dry ingredients.
Fill muffin tins- two-thirds full and bake 20-25 minutes or until toothpick comes out clean.
