Light pasta dish with full flovor but with out the fat! Light pasta dish with full flovor but with out the fat!
Number of Servings: 6


    4 tbsp. butter
    4 or 5 cloves of garlic
    2 cups sliced fresh mushrooms
    4 cups chopped fresh spinach
    2 roman tomatoes
    3 tbsp white wine
    ½ cup chicken stock (or veggie stock)
    2 tsp. Corn starch
    Penne pasta
    1/3 cup parmesan cheese
    2 chicken breasts


Start the pasta. Melt 2 tbsp of butter over low to medium heat. Chop up garlic and sauté until golden brown (not burned). Add sliced mushrooms and cook until liquid dissolves. Add white wine to the pan and cook until liquid is nearly gone. Salt and pepper mushrooms and add the chicken (or veggie) stock. Add in the corn starch and stir until the sauce thickens. (If sauce becomes too thick, just add a bit more stock.). Add diced tomatoes, sauté for a minute or two until tomatoes soften. Wilt in the spinach. Remove from heat. Drain pasta and add pasta sauce together, mix. Stir in parmesan cheese and add chicken.
