Number of Servings: 4


    * rolled oats (Bob’s Red Mill Extra Thick), dry, 2 cup
    * Canola Oil, 4 tsp
    * Water, 4 tsp

    * Cottage Cheese, 1% Milkfat, 1 cup (not packed)
    * Tofu, extra firm, 14oz
    * Egg, fresh, 2 large
    * Black Pepper to taste

    * Lemon Juice, 1 lemon yields
    * Mushrooms, fresh, 2 cup, pieces or slices
    * Smart Balance Buttery Spread, 2 tbsp
    * Salt, .25 tsp


Pre-heat oven to 350 and spray spring-form pan or deep dish pie plate.
1) in food processor or blender - pulverize oats to a fine flour then add in oil, water, and a pinch of salt (I measure out the salt for the sauce and use a pinch from there to make sure I'm not getting more sodium)
2) pour oat flour mixture into pan or dish and pat down - bake for 10 mins or until a bit crispy
3) in a food processor or blender - mix cheese, tofu, eggs, and pepper until smooth
4) pour tofu mixture into pan or dish and bake until firm, about 30 - 40 minutes
5) for the sauce that you add right before serving - slice mushrooms on a mandoline... this is a must for elegant presentation and best flavor but I've also had it where the shrooms they used were just those pre-sliced ones (it's not nearly as good)
6) lightly cook mushrooms with spread and salt in a microwave or small saucepan just until the mushrooms wilt and become pliable
7) take sauce off heat and add fresh lemon juice, mix, and pour over whole pie if you are serving it immediately (if not, hold off on the sauce and just do it serving by serving... heating the pie first if desired & then pouring the sauce on at the last minute)

*the lemon juice will become bitter if heated much
