Introduction

This tasty breakfast is a standard meal that helps me start the day with a hot cooked breakfast that provides great flavor without an excessive calorie count.

Once each week I roast fresh poblano or other tasty chiles and use as needed. You could substitute canned Anaheim chiles to save time, but you lose some flavor.

First prepare one soft boiled egg. While the egg is cooking toast a thin sandwich bread, I use 90 -100 calorie breads. Either in the microwave or on the stovetop cook one vegetarian sausage patty and reheat the roasted chile pepper.

Spread one Laughing Cow cheese wedge on the bread. I use one wedge to cover both bread halves. Cut the cooked veggie sausage and the roasted pepper into two portions and place half on each slice. Top with the soft boiled egg (sliced in half or quarters) and add a dash of salt and pepper to taste.

You could add some fresh fruit as a side. Sliced fresh melon would go well with this sandwich.

Tips

I steam my eggs instead of boiling. Seems to produce more consistent results.
