    Nonstick cooking spray
    2 eggs, lightly beaten
    1 c chopped green onions
    1 c finely shredded carrots
    1/4 c reduced-sodium soy sauce
    4 cloves garlic, minced
    2 TBS sesame seeds
    1 TBS finely chopped lemongrass or 2 tsp finely shredded lemon peel (optional)
    1 TBS grated fresh ginger
    2 tsp chili powder
    1.5 lb uncooked lean ground chicken


1. Preheat oven to 350*. Coat an 8 x 4 x 2" loaf pan with cooking spray; set aside.

2. In a bowl, combine eggs, onions, carrots, soy sauce, garlic, sesame seeds, lemongrass, ginger, and chili powder; add chicken. Mix well.

3. Pat into pan.

4. Bake for 60 to 70 minutes or until an instant-read thermometer inserted into center of loaf pan registers 165*F.

5. Let stand 10 minutes before removing from pan.
