    4 3oz Servings Boneless Skinless Chicken Breasts
    2c Brown Rice
    1c Skim Milk
    1 10oz Bag Frozen Broccoli Florets
    2 cans Low Fat Cream of Mushroom Soup
    1 can Button Mushrooms
    1 can Sliced Mushrooms
    Pam Cooking Spray (about 2 servings)


Preheat oven to 350

Spray a glass baking dish with Pam Cooking Spray

In a large mixing bowl mix together rice, milk , frozen broccoli and mushrooms. Pour mixture into greased baking dish.

You can either lay the whole chicken breasts on top of the rice mixture or cut them up into bite size pieces which my family prefers.

Cover baking dish with foil and bake for about 1 hour until chicken is done.

A co-worker gave me this recipe years ago in the non low fat version when I wanted something quick and easy to fix for dinner. This is the converted version for us dieters. My daughter loves this dish and used to ask me to cook it all the time. It is a great healthy meal.

    This was excellent. I added a little garlic and spread the mushroom soup over the rice before I added the chicken (i cut up in bite size pieces as well). This was so good, I will definitely make this again!! - 2/18/08
