Introduction

Super slimmed down summer potato salad. Super slimmed down summer potato salad.
Number of Servings: 6

Ingredients

    2 lbs Yukon Gold potatoes
    1 c Chobani 0% Plain Greek Yogurt
    3 tsp Inglehoffer Stone Ground Mustard
    3 stalks of Celery, diced
    .5 c Green onions, diced
    2 T Cider Vinegar or rice vinegar

Directions

Dice potatoes and add to stock pot; cover with water and add salt. Boil potatoes for 15-20 minutes or until fork tender, strain and set aside.

In a mixing bowl, combine yogurt, mustard and vinegar. Dice scallion and celery and add to yogurt mixture. Add Potatoes, season with salt and pepper to taste. Refrigerate and serve cold.
