    1 9 inch pie crust
    2 halves cooked, diced chicken breast
    1 cup ricotta
    .5 cup cheddar
    1/4 cup + 2 tbsp. parmesan
    2 eggs lightly beaten
    parsley to taste
    pepper and salt to taste


separate pie crusts into 8 pieces
roll into balls and mold into the cups of an 8-cup mini muffin tin
mix all ingredients together and spoon into cups and bake for 20 minutes
