Introduction

This could be made easily with chicken broth or stock instead of water. Adjust calories accordingly.

Ingredients

    1 cup orzo
    1 T Olive Oil
    3 Italian Sausage patties ( I use 1.5 each hot and spicy)
    1/2 to 1 cup chopped onion
    1 cup orzo
    1.5 cups brown rice
    5-6 cups water
    2 chicken bullion cubes
    2 (small) cans diced tomatoes
    2 cans beans, drained & rinsed ( I used 1 can pinto & 1 can red beans)

Directions

Brown sausage and onion together in pot - when they're not quite done, add olive oil & orzo, stir for about a minute, then add rice and stir for another 2-3 minutes.
Add water, undrained tomatoes, and bullion cubes.
Bring to a boil.
Cover and reduce heat to a simmer.
Cook, stirring very occasionally, until rice is done. This will take at least 40-50 minutes with brown rice.
Test near the end of cooking time.
If rice is not yet soft enough but not much liquid is left, add another 1-2 cups water (or chicken broth!) to the pot.
When rice is completely cooked, remove from heat, stir in beans, and let sit, covered, 5-10 minutes before serving.



Serving Size: Makes 10-12 1 cup servings
