    2 boneless, skinless chicken breast
    1 cup orange juice
    1/4 cup maple syrup
    1 tbsp. lemon juice
    1/4 cup Splenda
    1 tsp. ginger
    2 tbsp. cornstarch


Partially cook chicken. In a bowl, whisk orange juice, maple syrup, lemon juice, Splenda, and ginger. Pour over chicken. Cook until bubbling. Add 1 tbsp. cornstarch. Simmer until chicken is cooked through and sauce is thickened.

Makes 4 servings.

  • I'm not a fan of Splenda or any artificial sweetener so I used brown sugar instead (for me personally, I'd rather have the extra calories and not the chemicals). It turned out wonderfully! My husband and kids both ate it up! Also, I didn't have lemon juice so I sub'd w/ lime juice. - 3/6/08
