Ingredients

Egg, fresh, whole, raw, 2 cup (4.86 large eggs) (remove)
*Isernio's Italian sausage, 2 serving (remove)
Mushrooms, fresh, .5 cup, pieces or slices (remove)
Onions, raw, .5 cup, chopped (remove)
Garlic, 1 clove (remove)
*Red Bell Pepper (Peppers, sweet, red, raw) (USDA) (1 small, 74 g), 1 serving (remove)
Milk, 1%, .5 cup (remove)
Cheddar Cheese, .5 cup, shredded (remove)
Basil, 2 tbsp (remove)

Directions
Preheat oven to 375
Cook sausage
sautee onions, mushroom and garlic to taste, set aside.
Chop bell pepper, sausage and basil
In large mixing bowl, whisk eggs, milk, salt and pepper to taste.
In muffin pan, line with cupcake baking cups, or, spray pan with non-stick cooking spray (I like the baking cups for easier portability)
Place sauteed onions, mushrooms and garlic on bottom of each baking cup.
Place a layer of diced italian sausage next, followed by a layer of red bell pepper.
Then, fill each cup with each mixture, then top with fresh basil and sprinkle with shredded cheese.
Bake approximately 15 minutes until puffed up and golden. Allow to cool before freezing.
