Number of Servings: 6

Ingredients

    Chicken Breast (20 oz)
    Light Miracle Whip (1/2 cup)
    Spicy Mustard (1/3 cup/9tsp)
Grapes, sliced (1cup or to taste)
Celery, diced (1cup or to taste)
    Splenda (2tbsp/6tsp or to taste)
    Salt (dash/to taste)
    Pepper (dash/to taste)
Mrs. Dash Garlic and Herb (dash/to taste)
Healthy Life 80 Calorie Hot Dog Buns

Tips

#1. I like to spray the buns with spray butter and toast them slightly before I fill and serve. Makes this extra special.

#2. I like to added fresh sliced avocado along the top of the loaded bun. This adds about 50-60 calories and good healthy filling fats (1/4 of a small standard avocado)

#3. I like to serve this with a vegetable filled side salad or fresh steamed summer zuccini and squash. This makes for a lower carbohydrate, balanced and satisfying meal. With the avocado suggested in #2 and side item suggested here, this entire meal can come in under 400 calories depending on your salad dressing and salad toppings.

Directions

Boil two large chicken breasts (roughly 20 oz). Once boiled slice and dice as fine as you like.

In a large mixing bowl combine chicken with miracle whip, mustard, grapes, celery, Splenda, salt, pepper, and Mrs. Dash. Mix all ingredients well.

Fill Healthy Life Hot Dog Buns with chicken salad mixture and serve.
