Number of Servings: 4

One package of Tyson Roasted Diced Chicken (precooked), one diced green pepper, 1 14 oz can of tomato sauce (organic preferred), 1 14 oz can of diced tomatoes (organic preferred), 1/2 of a 7 oz can of sliced mushrooms (or fresh mushrooms, if desired), 2 TBS of Olvie Oil, 1/4 cup of Chicken Broth (organic preferred), diced onion to taste (I used dehydrated onion flakes), Italian Seasoning to taste, garlic powder 9or fresh garlic) to taste, black pepper to taste, 2 whole bay leaves

Saute diced green pepper, diced onion or onion flakes, a couple of shakes of the Italian Seasoning, and a couple shakes of the garlic powder for about two minutes over medium heat. Add the chicken, stirring often. After a couple of minutes, add the broth, slowly. Turn heat down a notch or two, and add about half of the can of mushrooms. Stir, and simmer for about a minute or two. Add the tomato sauce, the tomatoes, the bay leaves, and the black pepper, along with more garlic and Italian Seasoning to taste. Simmer on medium to medium low heat, stirring frequently for about 20 minutes, or until thoroughly heated. Serve over whole wheat spaghetti, brown rice, or other pasta. Makes roughly 4 servings.
