    3 cups all purpose, unbleached flour
    1 3/4 tsp kosher salt
    1/4 tsp instant yeast
    1 1/2 cups water


Whisk the flour, salt and yeast together in a large bowl.
Add water, stirring into a shaggy dough.
Cover and let stand on the counter (NOT refrigerator) for 12-18 hours.
Preheat an oven to 450 degrees. Place an oven proof vessel, I used a deep corningware casserole, with lid to pre heat.
Turn out dough onto a well floured surface and form into a round loaf.
Place loaf into pot and return to oven with lid on for 30 minutes.
