Ingredients

    1 cup dry Rice Select Organic Whole Wheat Couscous
    2.25 cups water
    1 cup of sun-dried tomatoes, chopped fine
    1 peeled cucumber chopped into small pieces
    1 onion chopped into small pieces
    5 oz. Athenos Fat-Free Feta Cheese
    2 tbsp. Balsamic Vinegar
    2 tsp. olive oil
    1 tsp Herbs de Provence

Tips

You can eat this salad immediately or let it cool for a few hours in the refrigerator.


Directions

Boil the water, add the couscous. Cover the couscous pot and remove from heat. Chop the cucumber, onion, and sun-dried tomatoes and add to the couscous. In a separate bowl mix together the balsamic vinegar, olive oil, and herbs de provence.
