Ingredients

    greens
    1/2 small yellow onion diced
    3 cloves garlic, minced
    2 cups of vegetable stock
    1/2 teaspoon red pepper flakes
    2 lbs. collared greens
    1 teaspoon black pepper
    1/2 cup red vinegar

    corn bread
    2 tabl ground flax seeds
    6 teaspoons water
    1 cup cornmeal
    1/4 cup of brown sugar in the raw
    2 teaspoons baking powder
    1 cup soymilk
    1/4 cup coconut oil

Tips

Wonderfully nutritious collard leaves are very low in calories (provide only 30 calories per 100 g) and contain no cholesterol. However, its green leaves contain a very good amount of soluble and insoluble dietary fiber that helps control LDL cholesterol levels and offer protection against hemorrhoids, constipation as well as colon cancer diseases.


Directions

greens
1 coat a large deep skillet or pot with oil
2 saute onions until almost tender over medium heat add garlic cook for 2-3 min
3 add vegetable broth the seasoning and vinegar
4 bring to a simmer then reduce heat
5 add greens simmer for 1 hr. add more broth if needed greens serves 4 /5
corn bread
mix all ingredients in a large bowl
pour into oiled pan

for 15- 30 min cornbread serves 9
