Ingredients

1 lb ground chicken breast
1 cup small dice red pepper
.75 cup thin sliced scallions - green and white parts
.75 cup small dice water chestnuts from can
3 tbsp fresh chopped cilantro
3 tbsp hoisin sauce
Water or no fat low sodium chicken broth to loosen if too dry
Low Sodium Soy Sauce to taste
Directions
Over medium heat in a sautee pan cook chicken as you would ground beef breaking up meat into small pieces.
Once chicken is cooked add red peppers and simmer adding a little water (1/4 cup) if pan is dry.
Add scallions, water chestnuts, and cilantro and then stir in hoisin sauce mixing thoroughly.
Enjoy with ice cold lettuce (iceberg or romaine whatever you like).
Add a little soy sauce if you want more salt or a little water or stock if you think its too dry but adding liquid will thin out the hoisin taste.
