Introduction

Greek yogurt and pickle brine make a blue cheese dressing that is better than any store bought restaurant kinds. This is great as a dip or salad dressing-- and it's even great on grilled mushrooms!
It's got high protein, too-- over 5 grams per serving!

Ingredients

    1.5 cup Plain Greek Yogurt
    1 cup Blue Cheese (crumbled, not packed)
    2 Tbl Red Wine Vinegar (or more, to taste)
    2 Tbl Dill pickle juice (or more, to taste) **
    1 tsp Garlic powder (or more, to taste)
    1 tsp Pepper, black (or more, to taste)
    1 tsp Parsley, dried (or more, to taste)
    Water, for consistency

Tips

- Don't use fresh garlic or parsley! The powdered kind is more potent and releases flavor in a very flavorful way in the dressing, AND the dressing will keep longer in the fridge.

This also gets better with time- by the second day, all of the flavors will have emulsified throughout the dressing.


Directions

Throw everything in a blender but the blue cheese.

Blend well together.

For chunky blue cheese, put 1/2 cup of the blue cheese in the blender and blend til smooth, adding water if needed to make it a dressing consistency. Then add remaining blue cheese.

For creamy blue cheese, Add the whole cup of blue cheese and a little more water to keep a good dressing consistency.

Serving Size: makes 12 servings, 3 Tbls per serving. (total yield is 2.25 cups)
